Vegan Strawberry Cheesecake
Vegan strawberry cheesecake – 3 layers of pure heaven. Smooth, creamy and naturally sweet – a perfect way to enjoy the fresh taste of summer.

- Requires: Blender, mixing bowl, scales, spoon, saucepan, whisk, 12” cake tin, fridge
Ingredients
For the base:
- 100g walnuts
- 50g gluten-free oats
- 1 tablespoon cacao powder
- pinch of salt
- pinch of ground nutmeg
- 4 pitted dates
- 50ml maple syrup
- 50ml coconut oil
For the filling:
- 500ml of plant-based milk (feel free to try my easy fresh almond milk recipe)
- 8 large strawberries
- 60ml of maple syrup
- 1/4 of a teaspoon of vanilla extract or vanilla paste
- juice of half a lemon squeezed
- 75g of gluten-free cornflour
For the topping:
- fresh strawberries and blueberries
- chia seeds
- desiccated coconut flakes
Method

For the base:
- Add all of the dry ingredients into the blender and blend until it comes to a fine breadcrumb consistency
- Add in the dates and then blend again to break down the dates
- Place this mix into a bowl and then add in the maple syrup and coconut oil (melted liquid form)
- Mix well until the wet and dry and well incorporated
- Line a 12inch cake tin or tart case with baking parchment and work the mix to cover the whole base ( do this with a moist hand so it doesn’t stick)
- Place the base into the fridge to set while you make the strawberry cheesecake filling

For the filling:
- Add all of the ingredients for the filling into a blender and blend for 2 minutes until smooth
- Pour the cream into a thick based saucepan and slowly bring up to a medium heat
- Once the cream is warm make sure you whisk constantly to avoid it sticking and burning
- Cool out for about 5 minutes until it has really thickened up
- Leave to stand for 5 minutes before pouring onto the base that you previously made
- Once the filling is in, place the cheesecake back into the fridge to set
- Setting will take about 1-2 hours

For the topping:
- After the filling layer has set, top with sliced strawberries and blueberries, a sprinkle of chia seeds and desiccated coconut flakes
