Chia and Vanilla Pudding with Blueberries.
You can add chia seeds to smoothies, or as we do here, soak them in nut milk so that they swell and create a pudding texture.

Ingredients
- 2 teaspoons of lucuma powder (a Peruvian fruit)
- 1 teaspoon of vanilla powder (cold-pressed and organic, where possible)
- 3 tablespoons of chia seeds
- 250ml of almond milk

Method
- Add your lucuma and vanilla powder into your almond milk
- Soak your chia seeds in your homemade almond milk for around 2-4 hours (or overnight, if preparing the night before)
- Once all soaked spoon all of this into a glass or bowl and top with fresh blueberries and chopped apple
Et Voila – the perfect breakfast!
