What is it?

The Brand New 5 Day Plant-Based Food Plan is so much more than just a food plan: it is a whole week to experience how you could feel by switching to a fully plant based diet. Even if you are already vegan or predominately plant based, this program has been carefully created to give you a nutrient dense week of eating – without feeling like you are missing out on anything! The plan runs from Monday – Friday and is delivered to your door daily!

It’s like having a private chef and nutritionist cook for you for the whole week. No worrying about what to cook and when to eat. All meals are prepared and labelled each morning, made 100% fresh and with all the information you need. It is a detox and an experience all in one, also giving you a real insight into how incredible you can feel if you put 100% focus into your diet.

What do you get each day?

3- 4 unique and delicious meals each day, plus 1 x 330ml juice and 1 x 330ml smoothie. On top of that, you will also get a little extra fiery ginger shot, to give you that little wake-up kick and replace your morning caffeine fix. Wednesday on the plan is a juice and soup day so on day 3 you will get an extra smoothie and the meals replaced with two delicious soups. Each day will also include vitamin C supplements and probiotics.

Everything on the program is prepared fresh and will be delivered to you each evening so that you have it ready to go the next day (starting Sunday)

A big part of the plan is to be eating little and often, each item throughout the day will be labelled with a recommended time to space it out nicely for the day. These are only recommended times, as everyone is different. Go with how you feel and follow that feeling!

Why should you do it?

My main goal with the 5 day plant-based plan is to set you up with 5 days of the healthiest, most nutrient dense eating that you have ever experienced. I want to do this so that you can learn and experience the best that your body can feel, coming away from the program with a desire to continue the good habits. This plan has been signed off by a qualified nutritionist, who I have worked with closely to create the menu. I want everyone who takes part in this plan to come away from it feeling energised, healthier and ready to change their lifestyle, with a whole new view and relationship with food. The Menu

Day One:

  • Vitamin C and B12 supplements
  • Homemade buckwheat and sun-dried tomato toast with smashed avocado, pomegranate, and toasted pumpkin seeds
  • Refresher Juice – Carrot, apple, lemon and mint
  • Courgette noodles with a basil, almond and kale pesto
  • Super greens smoothie – Cucumber, apple, kiwi, lemon, ginger, spinach and avocado
  • Chocolate peanut butter power ball
  • Sweet potato and red lentil Dahl served with cauliflower rice and tomato and red onion salsa.
  • Probiotics

Day Two:

  • Vitamin C and B12 supplements
  • Blueberry and almond smoothie bowl served with homemade date and apricot granola, chopped banana, pecans, chia seed and coconut flakes
  • Energy boost juice – Cucumber, celery, apple, kale and lime
  • Quinoa sushi with a miso dressing, avocado, cucumber and marinated tomato salsa
  • Blood booster smoothie – Carrot, apple, beetroot, lime and avocado
  • Smoked paprika and maple roasted nuts
  • The Falafel Bowl – Chickpea falafels, pickled carrots, cucumber and dill hummus, roasted sweet potatoes, marinated kale and a butter bean and pomegranate salad.
  • Probiotics

Day Three: Detox day!

  • Vitamin C and B12 supplements
  • Morning blast smoothie – Oats, blueberries, banana, coconut milk, juiced apples, coconut nectar and lime.
  • Cleanser juice – Carrot, apple, lime, mint, pineapple
  • Green Goddess soup – Pea and chilli soup blended with cashews and fresh spinach
  • Calcium Kick smoothie – Cucumber, apple, pear, celery, spinach, lime, ginger and avocado
  • Hummus and crudities
  • Roasted tomato and red pepper soup with fresh basil and smoked paprika
  • Probiotics

Day Four:

  • Vitamin C and B12 supplements
  • Buckwheat and cinnamon pancakes served with peanut butter, chopped nuts, and a sweet cashew cream.
  • Roots Juice – Carrot, apple, beetroot, parsnip, sweet potato, lime and ginger
  • Vietnamese rice paper rolls with a soy and peanut dipping sauce
  • Carotene smoothie – Carrot, apple, celery, lemon, pineapple, avocado
  • Smoked paprika and maple roasted nuts
  • Roasted butternut squash with fresh and zesty quinoa tabbouleh, fermented cabbage and baba-ganoush

Day Five:

  • Vitamin C and B12 supplements
  • The nutty bowl – Cashew nut and cinnamon smoothie served with homemade date and apricot granola, chopped pineapple and banana served with chopped nuts, toasted seeds and coconut flakes.
  • Mineral magic juice – Carrot, apple, parsnip, lime, ginger and pineapple
  • Courgette and spinach fritters served with wilted spinach, cashew cheese, hummus and salsa verde
  • Super greens smoothie – Cucumber, apple, kiwi, lemon, ginger, spinach and avocado
  • Raisin and apricot chocolate flapjack
  • Tacos – romaine lettuce filled with pecan and sun dried tomato filling, avocado, cashew cheese and tomato salsa

The Chef

Jay Halford

My name’s Jay Halford and I’m on a mission to re-educate people into realising how easy it is to make the transition into feeding their body what is so desperately craves – healthy natural food.

My background as a chef and in catering has meant that for me, taste always comes first. I believe that you should recognise every ingredient that is used in a recipe; how they are best combined to create the ultimate taste.

Where did my journey begin? Well, my love of food began at the age of 13; I worked in a busy Italian restaurant, washing pots for what can only be described as a nutcase of a chef with a huge passion for food. It was here that I decided that upon leaving school I would complete an apprenticeship – I did and then got straight into it. I started work at Lords of the Manor, A Michelin Star restaurant close to my home in Cheltenham. There, I met a great friend, Mark; his work ethic was impressive, he showed me his dedication to food and the hard work it entailed.

I won’t lie, after two years of learning everything involved, the long hours and stress became too much. I was beginning to lose my love of being a chef – not of food though, nothing could dispel that. This was a life-changing time as it prompted me to travel the world. You can imagine the variety of foods, juicing and techniques I was exposed to – this just fuelled my love of food even further.

I realised I could still do what I loved doing but in the way that I wanted to do it. It is now a massively growing trend, with many more people now consciously thinking about their health and what they are putting into their bodies.
Returning to Cheltenham, I knew it was time to incorporate my new way of thinking into my life. A personal trainer friend of mine introduced me to raw food and clean living; I was hooked. Adopting juicing and raw foods into my life, it had a profound effect and I wanted to share this with the world. This is when ‘The Core in Cheltenham’ was created.

I continue to run the Core in Cheltenham for 4 years whilst building my personnel brand and getting myself everywhere and anywhere that would have me doing pop up restaurants and workshops.

I have been lucky enough to travel all over the world doing this and now and so happy to be passing on my passion and love for good food and educating so many people on how it can change their lives.
